Leftover Turkey Soup

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 celery stalks, chopped
- 3 carrots, peeled and chopped
- 2 cloves garlic, minced
- 1 can low-fat, low sodium chicken broth
- 1 can beef broth
- 2 cups cooked turkey, cut into bite size pieces
- 1 to 2 cups frozen corn (or leftover corn from previous night's meal)
- 1 to 2 cups frozen peas (or leftover peas from previous night's meal)
- 2 cups cooked rice
- 1 teaspoon dried thyme
- 1 bay leaf
- ground black pepper, to taste
- 1/2 cup heavy whipping cream

Preparation
Step 1
In large pot, heat olive oil over medium high heat. Add onion, celery, carrots, and garlic. Saute until soft, about 5 minutes.
Stir in all other ingredients except heavy whipping cream. Heat to a boil, then reduce heat and simmer for 30 minutes.
Add heavy whipping cream and heat through. Remove bay leaf and serve.
