Layered Breaakfast Casserole (slow cooker)

  • 6 medium potatoes
  • 2 dozen eggs
  • 1 lb. chopped cooked ham
  • 6 oz. cheese product, shredded (like Velveeta)

Preparation

Step 1

Boil the potatoes in their skins until soft. Chill. When thoroughly chilled, grate. Spread in bottom of greased 6 qt. slow cooker.

Scramble and cook eggs in a non-stick skillet. When just set, spoon cooked eggs over top of potatoes.

Layer ham evenly over eggs. Sprinkle with cheese.

Cover and cook on low 1 hour or until cheese is melted.
