Mom's Baked Parmesan Chicken

Can be used on it's own or a healthier alternative to fried chicken breasts in chicken parmesan.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper (to taste)
  • 5-6 slices of bread (or can used boxed plain bread crumbs)
  • 1/3 c. parmesan cheese
  • 1/2 tsp. garlic powder
  • 1 c. Milk (or 2 eggs beaten with water) for the dredge
  • 2 tbsp. Margarine

Preparation

Step 1

Preheat oven to 350 degrees.

Season both sides of the chicken breasts with salt and pepper. If you choose to use the bread, put bread in the food processor and make the bread crumbs. Transfer the crumbs to a medium size bowl and mix in the parmesan cheese and garlic powder.

Place the milk (or egg mixture) into a shallow dish. Place the bread crumb mixture into a shallow dish or large plate.

Dip each chicken breast into the milk and then into the bread crumb mixture. Place the breasts into a greased baking dish. If you want more crust, place more of the crumb mixture on top of each chicken breast.

Place a few small dabs of margarine onto each chicken breast. Bake for 35-45 minutes depending on the size of the breasts. Internal temp of the breasts should be 165 degrees and the crust should be browned.
