lb.clam shell cherry tomatoes-preferably mixed color heirloom variety
Tablespoons good olive oil
Salt and freshly group pepper to taste
Preheat oven to 400 degrees. In a 8-9 inch square baking dish or pie plate, toss the tomatoes with the oil and a bit of pepper, nestle the unwrapped cheese into the center of the tomatoes and roast in the preheated oven for 15-20 minutes until juices start from tomatoes and cheese is soft. Gently stir tomatoes into melted cheese and spoon over chicken breast to serve making sure everyone gets sauce and tomatoes.
