Almond Rice Burgers

Ingredients

  • 1 cup cooked short granin brown rice
  • 3/4 cup pinto beans
  • 1 1/2 cups dry bread crumbs
  • 1/2 cup coarsely ground almonds
  • 1/4 cup grated onion
  • 1/4 cup grated carrots
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne
  • 2 tablespoons oil

Preparation

Step 1

In a large bowl, combine the rice, beans and 1/2 cup of the bread crumbs, the almonds, onions, carrots, and spices until well blended or combine in food processor. Shape the mixture into six 1/4 inch patties. Spread the remaining bread crumbs on a plate nd coat the patties on both sides. Heat the oil in a large skillet over medium high heat until hot. Add the patties and cook for about 3 minutes per side, until golden brown.
