Sufganiot (quick, no rise verson)

Ingredients

  • 2 cups sugar
  • 4 eggs -- beaten
  • 2 cups milk
  • 3 teaspoons vanilla
  • 6 cups flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder

Preparation

Step 1

Fill a deep pot with oil, at least 3 inches, to 375 degrees.

Combine wet ingredients with dry ingredients until it forms a wet batter. Use a soup spoon or tablespoon coated with flour to form small rounded balls. Try not to handle them too much or they will become dense.

Gently drop the balls, one at a time, into the hot oil. Using a slotted spoon turn the doughnuts so they equally brown. Remove and drain on paper towels.

Glaze with a mixture of confectioners sugar and water and/or inject jelly into them when cool enough to handle.
