Ingredients
- 5-6 medium sweet potatoes peeled or 2 18 oz cans or 1 40 oz can sweet pot potatoes, drained and cut into bite size pieces.
- 1-21 oz can apple pie filling
- 1- 8oz can whole cranberry sauce
- 2 TBS. apricot preserves
- 2 TBS. orange marmalade.
Preparation
Step 1
In a lg. saucepan cook potatoes, covered in enough boiling salted water, about 15 min. or till tender. Drain and set aside. Spread pie filling in an 8x8 dish; arrange cooked or canned sweet potatoes on top. In a small mixing bowl stir together cranberry sauce, apricot preserves and orange marmalade; spoon over sweet potatoes. Bake uncovered in a 350 degree oven for 20-25 min. or till heated through. Makes 6-8 servings.
