Ingredients
- For the dressing:
- 8 ounces bacon, cooked and chopped into large pieces
- 8 ounces baby arugula
- 1 large apple, peeled and diced
- 1/2 cup toasted walnut or pecans, coarsely chopped
- 1/2 cup dried cranberries
- 6 ounces blue cheese, crumbled
- 3 tablespoons apple cider vinegar
- 1 teaspoon grated orange zest
- 2 tablespoons freshly squeezed orange juice
- 1 teaspoon Dijon mustard (originally recipe calls for 2 1/2 teaspoons)
- 2 tablespoons pure maple syrup
- kosher salt
- 2/3 cup good olive oil (can use any oil such as canola or vegetable)
Preparation
Step 1
For the dressing: whisk together the vinegar, orange zest and juice, mustard, maple syrup, and salt. Slowly whisk in the olive oil.
Toss the dressing with the arugula and put on plates. Top with bacon, apple, nuts, cranberries and blue cheese. Serve immediately.
