Ingredients
- 3 large carrots, sliced
- 1 medium size onion, chopped
- 5-6 summer squash or 2 large zucchini squash, peeled and sliced
- 1 cup sour cream
- 1 small can cream of chicken soup
- 1 stick margarine
- 1 pkg Pepperidge Farm Stuffing Mix, Crushed Croutons, or Stovetop Stuffing Mix
Preparation
Step 1
Place carrots in heavy saucepan and cover with water...cook until almost tender. Add chopped onion and sliced squash. Continue cooking until all are tender. Drain in colander. Combine sour cream and soup. Mix with vegetables.
Melt margarine and add stuffing mix. Line greased casserole dish with stuffing mixture (save some for the top).
Pour vegetables over stuffing mix and top with remaining stuffing mix.
Bake at 350 degrees until brown and bubbly.
