Ingredients

  • 4-4 1/2 cups pre-sifted flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1/2 cup oil
  • 1/4 cup melted butter
  • 1/4 cup orange juice
  • 1 teaspoon grated orange rind
  • 4 eggs, reserve 1 egg white for topping
  • 1 teaspoon vanilla
  • FILLING
  • 1 - 1 1/2 cups chopped nuts
  • 1 - 1 1/2 cups raisins
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • red raspberry preserves or other jam
  • TOPPING
  • 1 reserved egg white
  • 1/4 cup sugar
  • 1 teaspoon cinnamon

Preparation

Step 1

Preheat oven to 350 degrees. Sift flour, baking powder, salt and sugar into large bowl. Make a well in the center and add oil, butter, orange juice and rind, eggs, (except one reserved egg white) and vanilla. Knead dough. Chill for several hours or overnight. Cut dough into 4 parts. Roll one part on floured board, about a 6 inch X 14 inch rectangle. Spread with jam, sprinkle with nuts, raisins and sugar-cinnamon mixture. Roll as for a jelly roll. Brush top with reserved egg white and topping mixture. Slice into 1/2 inch slices and place on lightly greased baking sheet with topping side up about 1/2 inch apart. Repeat with the three remaining pieces of dough. Bake for 25-30 minutes. Remove immediately to a tray and dust with powdered sugar.
