Ingredients
- 1 box manicotti shells uncooked
- 1/2 lb ground beef
- 1 1/2 cups mozzarella cheese
- 1 cup ricotta cheese
- 1/4 cup parmesan cheese
- 3/4 cup onion
- 1 3/4 cup zucchini
- 8 egg whites slightly beated
- 1/4 cup dry italian bread crumbs
- 3/4 tsp oregano
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 14 oz jar spaghetti sauce
Preparation
Step 1
cook pasta according to package. cool in single layer on foil. heat oven to 350 degrees. in a large skillet, brown meat, drain off fat. stir together meat, 1 cup mozzarella cheese and all other ingredients except sauce. spread thin layer of sauce on bottom of nonstick sprayed baking dish. fill each cooled pasta tube with meat filling and place in dish. cover with remaining sauce. sprinkle with remaining cheese and small amount of parmesan if desired. cover with foil. bake 45 minutes or until hot and bubbly.
