Ingredients

    c butter room temp

  • c flour

  • 2

    tsp baking powder

  • 1

    tsp baking soda

  • 1

    c sour cream

  • 1

    c sugar

  • 1

    tsp vanilla

  • 2

    eggs

  • 1

    can apple pie filling

  • Strudel Topping

  • 1

    c dark brown sugar

  • 1

    c flour

  • ½

    tsp salt

  • ½

    tsp cinnamon

  • ½

    c butter chilled, cut into small pieces

Directions

1. Prepare strudel topping: In a medium bowl, stir together brown sugar, flour and salt. With a fork, cut in butter until mix resembles large coarse crumbs. Refrigerate until ready to use. Preheat oven to 350 degrees. Prepare muffins: In a small bowl, whisk together dry ingredients except sugar. 2. In another bowl, beat together butter, sour cream, sugar and vanilla until light and fluffy. Beat in eggs one at a time. On low, beat in flour mix until combined. 3. In muffin cups, fill 1/3 batter, 1tbsp apples, 1tsp strudel, 1/3 batter, top with strudel. Bake 25-30min or until toothpick comes out clean. Cool in pan 5 min. then remove.
