Ingredients
- Muffin
- 1/2 c butter room temp
- 1 3/4 c flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 c sour cream
- 1 c sugar
- 1 tsp vanilla
- 2 eggs
- 1 can apple pie filling
- Strudel Topping
- 1 c dark brown sugar
- 1 c flour
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 c butter chilled, cut into small pieces

Step 1
1. Prepare strudel topping: In a medium bowl, stir together brown sugar, flour and salt. With a fork, cut in butter until mix resembles large coarse crumbs. Refrigerate until ready to use. Preheat oven to 350 degrees. Prepare muffins: In a small bowl, whisk together dry ingredients except sugar.
2. In another bowl, beat together butter, sour cream, sugar and vanilla until light and fluffy. Beat in eggs one at a time. On low, beat in flour mix until combined.
3. In muffin cups, fill 1/3 batter, 1tbsp apples, 1tsp strudel, 1/3 batter, top with strudel. Bake 25-30min or until toothpick comes out clean. Cool in pan 5 min. then remove.
