A Tisket, A Tasket a Holiday Salad Basket

Every year for the holidays we plan a multi-course menu based on a chosen theme. This year in celebration of our first grandchild, we devised a seven course meal based on nursery rhymes, candies and children's toys. Here is my interpetation of the famous children's rhyme, "A Tisket, A Tasket", in the form of a salad.

Ingredients
- 1 bag salad greens, your choice
- 2 pears
- 1 basket raspberries
- 8 Pepperidge Farms, puff pastry cups
- (baked according to instructions)
- Raspberry Vinaigrette
- 1/4 cup raspberry vinegar
- 2 tablespoons rice vinegar
- 1 teaspoon dijon mustard
- 1/2 cup virgin olive oil
- salt and pepper to taste
Preparation
Step 1
1. Wash and dry greens. Cube pears and place in water with lemon, rinse raspberries, set aside.
2. Bake pastry cups as directed. (Can be made before hand. Store in dry location until ready to use.
3. Prepare Vinaigrette. Combine vinegars, mustard, salt and pepper in small bowl. Whisk together and slowly drizzle olive oil to make vinaigrette.
4. To serve: place puff pastry in center of salad plate, dress greens with vinaigrette and place in center of pastry shell. Surround with pears and raspberries. Enjoy!
