Oriental Chicken Salad

Ingredients

  • 1 1/2 pounds boneless skinless chicken breast meat, cooked
  • 1 large red bell pepper
  • 1 cup snow peas, partially cooked
  • 1 medium carrot
  • 1 green onion
  • 7 tablespoons low fat mayonnaise
  • 1 tablespoon low sodium soy sauce
  • 1/4 teaspoon ground ginger
  • 4 cups mixed salad greens

Preparation

Step 1

Slice chicken breast and bell pepper into strips. Slice snow peas lengthwise. Slice carrot diagonally and chop green onion. In a large bowl, combine mayonnaise, soy sauce and ginger; add remaining ingredients, except salad greens; chill. Divide salad greens evenly among dinner plates and top with chicken.
