Step 1
Preheat oven to 500 degrees. Get one whole (4-5 lb) filet of beef that is trimmed and tied. Then place beef on a baking sheet and put outside dry with a paper towel. Spread two tbsp room tempterature butter on outside and sprinkle with 1 tbsp salt and pepper. roast in oven for exactly 22 minutes for rare and 25 minutes for medium rare. Remove the beef from oven and cover tightly with foil and allow it to rest at room temperature for 20 minutes. Remove strings and slice it thickly. WE TRIED THIS 1-3-11 AND IT WAS AMAZINGLY GOOD. I BOUGHT 2 LB TENDERLOIN FROM BYERLYS, $25/LB. IT WAS NOT QUITE DONE ENOUGH, HAD TO PAY FRY IT. SERVED IT WITH GORGONZOLA SAUCE.
