Ingredients

  • 1/2 cup unsalted butter
  • 1 egg
  • 3/4 cup packed brown sugar
  • 1/2 tsp. baking soda
  • 1/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp. vanilla
  • 3/4 cup coarsely chopped unsalted roasted peanuts
  • 1/4 tsp. salt
  • 12 oz. coarsely chopped semi-sweet chocolate
  • 1/3 cup chunky peanut butter

Preparation

Step 1

StIn a large mixing bowl, combine butter, sugars, vanilla, and salt. Beat with a spoon until fluffy. Beat in the peanut butter, egg and baking soda. Stir in flour, then the peanuts and chocolate. Transfer to a bowl just large enough for the dough. Cover and refrigerate until firm. (at least four hours)

Preheat oven to 350 F. Lightly grease baking sheets. Drop large cookie three inches apart. Bake for 10 to 12 minutes. Cool on sheets for 2 minutes; transfer to paper towels for 2 minutes and transfer to a rack to cool.
