Swiss Chicken Over Rice

  • 2-3 chicken breasts
  • flour
  • 1/2 tsp black pepper
  • 4 tb margarine
  • 1 can chicken broth
  • 1/4 cup dry white wine
  • 1/4 tsp dried oregano
  • 2-3 slices swiss cheese
  • minute rice

Preparation

Step 1

Cut chicken breasts into bite size pieces. Add pepper to flour in shallow dish. Coat chicken pieces in flour.

Melt margarine in large skillet and add floured chicken pieces. Brown chicken until golden brown, turning frequently.

Add chicken broth, wine, and oregano to chicken in skillet. Increase heat and bring to a boil. Reduce heat to med-low, add cheese and stir until it has melted and sauce on chicken has thickened.

Prepare minute rice and place on plates. Spoon chicken mixture over rice.
