Ingredients

  • 1 1/2 c sugar
  • 1/2 c butter
  • 1/2 c whole milk
  • 1/2 c almond or peanut butter
  • 3 tbsp unsweetened cocoa powder
  • 1 tsp vanilla
  • 3 c quick cook oats
  • 1/2 c sliced almonds + 1/2c
  • 1/2 c shredded sweet coconut + 1/2c
  • 1/2 c dried cranberries + 1/2c

Preparation

Step 1

1. Line 2 baking sheets with waxed paper. Set aside.

2. In a medium saucepan, combine sugar, butter and milk. Cook over medium high heat until butter melts and is combined, stirring constantly. Bring to a boil, and boil for 1 minute. Remove from heat.

3. Add Peanut butter or almond butter, cocoa powder and vanilla, stirring until combined. Add oats, almonds, cranberries and coconut. Stir to combine.

4. Using a scoop, drop mixture onto prepared baking sheets while cookies are still soft, garnish with chopped almonds and cranberries pressing slightly to adhere. Let cookies sit until firm. Store in a covered container in the fridge for up to 2 days.
