Orange Beef 'n' Rice

Ingredients

  • 1 Tbsp oil
  • 1 pound top beef round, cut into 1/2 inch cubes
  • 1 small onion, diced
  • 2 cloves garlic, sliced
  • 1/2 pound sliced mushrooms
  • 1 cup shredded carrots
  • 1 pkg (6 oz) wild-and-white rice pilaf mix
  • 1 cup orange juice
  • 1 cup beef broth

Preparation

Step 1

1. Briefly heat oil in large, deep pot over medium-high heat. Add beef and onion. Cook, stirring frequently, for 5 minutes. Add garlic, mushrooms and carrots. Cook another 5 minutes.

2. Add pilaf mix, orange juice and broth; bring to a boil, then reduce heat and simmer, covered, for 20 minutes or until liquid has been absorbed. Makes 4 servings.
