Turkey Roasting Instructions

Instead of brining, try salting. Some folks say salting a turkey produces meat with a far better flavor than brining. I think so!

Ingredients

  • kosher salt
  • plastic wrap
  • foil container to hold turkey and any juice that might accumulate

Preparation

Step 1

Rub a generous amount of kosher salt on all turkey surfaces. Cover with plastic wrap and refrigerate overnight.

When ready to roast turkey, remove turkey from refrigerator. Then rinse the salt from the turkey, pat it dry and rub turkey with oil. Stuff with dressing if desired. Tent with foil and pop into oven at 325 degrees. Usual cook times are 20 minutes for every pound of turkey.

The turkey should never go directly from oven to the table. It needs to rest before serving for the juices to redistribute.

Cover the turkey with heavy duty foil and a few bath towels to keep it warm. Then let it rest for 20-30 minutes. Carve and serve.
