Ingredients
- 3 large potatoes, peeled and thinly sliced
- 1 medium onion, chopped
- 3 tbsp grated Parmesan cheese
- 1 tbsp minced chives
- 1/2 tsp seasoned salt
- 1/4 tsp pepper
- 2 tbsp butter
- 1/2 cup crumbled cooked bacon
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded Cheddar cheese
Preparation
Step 1
1. In a large bowl, combine the potatoes, onion, Parmesan cheese, chives, seasoned salt and pepper.
2. Transfer to a double thickness of greased heavy-duty foil (about 18" square). Dot with butter. Fold foil around potato mixture and seal tightly.
3. Grill, covered, over medium heat for 30-35 mins or until potatoes are tender, turning once.
4. Carefully open foil. Sprinkle bacon and mozzarella and cheddar cheeses over potato mixture.
5. Grill 3-5 mins longer or until cheese is melted.
