Ingredients
- 2 1/4 cups water
- 3/4 cup sugar
- 1 lime
- 6 tablespoons Champagne or sparkling wine (optional)
Preparation
Step 1
In a medium, nonreactive saucepan, mix 1 cup of the water with the sugar. Grate the zest of the lime directly into the saucepan. Heat, stirring frequently until the sugar is completely dissolved. Remove from heat and add the remaining 1 1/4 cups water, then chill thoroughly.
Mix in the lime juice and Champagne, if using. Freeze mixture in ice cream maker according to manufacturer’s instructions.
