Easy Slow Cooker Fajitas

Ingredients

  • 1-1/2 pounds flank steak, sliced in strips
  • 2 tablespoons Homemade Gourmet Taco Soup Seasoning
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1 tablespoon canola oil
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 jalapeno pepper, seeded and sliced
  • 12 flour tortillas, warmed
  • Toppings of your choice (sour cream, cheddar cheese, salsa)

Preparation

Step 1

1. Lightly spray slow cooker with nonstick cooking spray or line with a slow cooker liner. Add meat, seasoning, and tomatoes.
2. Cook 4 hours on high or 8 hour on low until meat is tender.
3. When ready to serve, heat oil in a large nonstick skillet over medium heat, saute' onions, and peppers until tender.
4. Spoon meat mixture and vegetables on tortillas; add toppings of choice if desired. Roll up tortillas.
