Slow Cooker Pasta Fagioli Soup

Ingredients

  • 2 lbs. ground chuck
  • 1 cup diced onion
  • 3 carrots chopped
  • 3 ribs celery diced
  • 2 cloves garlic minced
  • 2 (28 oz.) cans diced tomatoes
  • 1 can (15oz.) red kidney beans drained
  • 1 (15oz) can cannellini beans drained
  • 2 (15oz.) cans beef stock
  • 1 jar traditional spagetti sauce
  • 1 tbsp. white vinegar
  • 3 tsps. oregano
  • 2 tsps. basil
  • 1 tsp. tabasco sauce
  • 8 oz. ditalini pasta or other small pasta

Preparation

Step 1

Brown ground beef and drain.

Put beef and all other ingredients in a slow cooker except the pasta.

Cook on low 7-8 hours or high 4-5 hrs.

Before serving cook pasta according to package directions.

Drain and add to soup.

Serve immediately.

Stove top directions.

Brown meat in a large stock pot, drain.

Add all the other ingedients except pasta.

Simmer for 1 hour.

Cook pasta and add to the soup, let simmer for 10 minutes more.
