Jiffy Ground Pork Skillet *(GOOD)*

Ingredients

  • 1 pound ground pork
  • 1/2 cup chopped onion
  • 1-1/2 cups uncooked penne pasta or elbow macaroni
  • 2 cups water
  • 1 can (14-1/2 ounces) stewed tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon oregano
  • 1 tablespoon garlic salt
  • 1/2 cup cilantro (Chinese parsley), chopped
  • 1 medium zucchini, cut into 1/4-inch slices

Preparation

Step 1

In a large skillet, cook pork and onion over medium heat until meat is no longer pink; drain. Add pasta, water, tomatoes, tomato sauce, Italian seasoning, oregano, garlic salt, and cilantro (Chinese parsley). Bring to a boil. Reduce heat; cover and cook for 15-20 minutes to allow flavors to blend and pasta is al dente.

Stir in zucchini. Cover and cook for 3 minutes until zucchini is crisp-tender.

Yield: 5 servings.
