Lunchtime Burritos

These wraps are so easy to make, and kids love them. Serve them frequently for a fast lunch.

Ingredients

  • 1 cup ( 250 mL) shredded cooked chicken, turkey or beef ¾ cup ( 175 mL) shredded Monterey Jack cheese 1/ 3 cup ( 75 mL) salsa
  • ¼ cup ( 60 mL) low-fat sour cream or plain yogurt Four 8-inch ( 20-cm) whole wheat flour tortillas 1 green onion, chopped 1/ 3 cup ( 75 mL) chopped red bell pepper
  • ½ cup ( 125 mL) chopped romaine lettuce 1 avocado, thinly sliced ( optional)

Preparation

Step 1

In a bowl, combine chicken, cheese, salsa and sour cream or yogurt. Divide mixture evenly among tortillas, spreading to within 1 inch ( 2.5 cm) of edges. Evenly sprinkle green onion, red pepper and lettuce over chicken mixture. Top each with thin slices of avocado. Fold into tortillas and roll up from the bottom.
