Grilled Chicken with Amish Blue Cheese Sauce

Ingredients

  • Cheese sauce:
  • 3/4 cup plain yogurt
  • 3 oz. cream cheese, softened
  • 5 tbls. blue cheese crumbles
  • 2 tbls. chopped green onion
  • 1 1/2 tsp. lemon pepper
  • 1/8 tsp. salt
  • Chicken:
  • 4 boneless skinless chicken breasts
  • 4 tbls. butter, melted
  • Salt and pepper to taste
  • 1 large red bell pepper cut into 1/2 inch strips

Preparation

Step 1


1 Preheat grill to medium heat. (Or just bake or braise chicken!)

2 In food processor, blend yogurt and cream cheese until smooth. Add blue cheese, green onion, lemon pepper and salt. Process just until mixed. Cover and chill until ready to serve.

3 Brush chicken with butter and sprinkle with salt and pepper. Grill chicken, uncovered over medium heat for 5 minutes. Turn chicken and grill 10 minutes long or until juices run clear.

4 Brush peppers with melted butter and grill 5 minutes. Garnish chicken with peppers and serve with cream sauce.
