Ingredients
- 1.5 TBSP butter
- 1 finely chopped Sweet Vidalia Onion
- 1 lb ground beef
- 1 Pack of meatloaf seasoning
- 1 32 oz box of chicken broth
- 1 lb slab of 2% Velveeta cheese
- 1 pint half and half
- 1.5 TBSP water
- 1 TBSP all purpose flour

Preparation
Step 1
Melt 1.5 TBSP butter in a large pot
-After butter melts add 1 finely chopped Sweet Vidalia Onion to the
pot (I don’t like strong onion flavor so I only used half an onion
but I could barely taste it)
-While onions are cooking mix 1 lb ground beef with a package of
hamburger seasoning and brown the meat in a frying pan.I used
meatloaf seasoning
- Pour 1 32 oz box of chicken broth to the pot and stir.
- Slice a 1 lb slab of 2% Velveeta cheese into several pieces, add
it to the pot, and stir to prevent the cheese from sticking to the
bottom and burning.
-Pour in 1 pint of low fat or fat free half and half into the pot
-Mix 1.5 TBSP water with 1 TBSP all purpose flour to create the
slurry and add it to the soup
-****Continue to Stir**** while the soup is brought to a boil to
prevent a nasty brown layer of cheese forming at the bottom.
-Add the ground beef to the soup
-Season with a little black and red pepper
-Last step is to add in a bag of shredded sandwich lettuce to the
soup. I know it sounds strange but I swear this is the best part!
I add shredded lettuce and chopped tomatoes after it is in the bowl.
Nice garnish.
