Green Beans with Pineapple Vinaigrette

Ingredients

  • 2 pounds fresh green beans -- cut into 1 1/2"
  • Pieces
  • 24 small cherry tomatoes -- halved
  • 1/2 cup red onion -- chopped
  • 3/4 cup chopped fresh parsley
  • 1/4 cup water
  • 1/4 cup white wine vinegar
  • 2 Tablespoons olive oil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon pepper
  • 2 cloves garlic -- minced

Preparation

Step 1

Steam beans, plunge in cold water and drain. Combine beans, tomatoes and onion in a medium bowl.

Combine the chopped parsley and remaining ingredients in a small bowl, stirring until well-blended. Pour over the vegetables, tossing gently to coat.
