Brie with Roasted Pears

Ingredients

  • 1 (6inch) round Brie
  • 2 Almost ripe pears
  • 1-2 tsp. Thyme finely chopped

Preparation

Step 1

Preheat oven 425F

Cut the top rind off the brie and discard. Set aside.
Peel and core pears, then slice 1/4 inch thick
Lay on a generally buttered baking sheet and roast for 15 mins turn and roast for 15 mins more until edges are caramelized.
Arrange slices overlapping in a circle on top of the Brie.
Cover and refrigerate for up to 1/2 a day.

*When ready to serve: heat oven 350F and cook for 10-15 mins or until softened. Sprinkle with the Thyme.
