- 1/4 cup butter or margarine
- 5 cups (4 onz) herb-seasoned stuffing mix
- 1/2 cup water
- 1/4 cup finely chopped celery
- 1/4 cup chopped fried apricots
- 1 lamb rib crown roast (about 4 pounds) - pork
Preparation
Step 1
1. Melt butter in a 1-quart glass measuring pitcher in microwave oven (about 1 minute at High). Add Stuffing mix, water celery and apricots; mix well.
2. Place lamb crow roast on a microwave-oven-safe roast rack set in a 2½-quart microwave-oven-safe open oval casserole. Fill center cavity with stuffing. Cook in microwave/convention oven 25 minutes at Combination I
3. Rotate casserole one-half turn. Shield meat and ribs as needed with aluminum foil.
Cook in microwave.convection oven 20 to 25 minutes at Combination I. Or, if using temperature Probe, insert probe into meaty portion of roast and cook in microwave/convection oven set at 145°F at Combination I for medium.
4. Remove from oven, cover with foil and let stand 10 minutes.
