PEAR AND BRIE QUESADILLAS

A canned pear is simply a poached pear. It’s soft and sweet and ready to eat. Pears and cheese are a classic combination; here they’re served warm and make a festive appetizer or snack.
Ingredients
- 4 pear halves, canned
- 8 oz. Brie, ripe but firm {can substitute light Brie}
- 8 medium regular or high-fiber Flour tortillas
- 1/4 cup sour cream
- 1/2 cup pomegranate seeds

Step 1
Preheat oven to 200°F. Cut pear into thin slices and pat dry with a paper towel. Cut Brie into thin slices.
Heat a large nonstick pan over med-high heat. Place 1 tortilla in the pan. Evenly arrange the Brie slices over the tortilla. Next, add the pear and place another tortilla on top. Cook about 3 minutes and then flip using a spatula. Cook quesadilla another 3 minutes or until the cheese is melted. Place on a baking sheet and transfer to the oven. Repeat with remaining tortillas and pears.
Remove from baking sheet and cut into wedges. Spread each quesadilla with a tablespoon of sour cream and garnish with pomegranate seeds. Serve warm.
