Miso & Sesame Potato

Ingredients

  • 1 lb unpeeled baby red potatoes in 1/4 inch rounds
  • 2 tbsp red miso
  • 2 tsp sake
  • 1 tsp mirin
  • 1/4 cup oil
  • 2 tsp toasted sesame seeds

Preparation

Step 1

Blanch the potato slices in salted water for 5 minutes and drain.
Combine miso, sake, and mirin to form a paste and set aside.
Add oil to a large skillet and heat over medium heat. When hot add potatoes in a single layer. Coat evenly with oil.
Cook undisturbed for 7 minutes. Gently fli and cook an additional 5 to 10 minutes. Remove.
Add the miso mixture and gently toss.
Sprinkle with sesame seeds.
