White Chocolate Cranberry Bread

Ingredients

  • 2 1/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 2 eggs
  • 1 cup coconut milk or eggnog
  • juice from 2 segments of a clementine (or regular oranges)
  • 3/4 cup white sugar
  • 1/4 cup butter
  • 1 ripe banana, mashed
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 bag fresh cranberries (about 3.5 cups)
  • 1/4 cup white chocolate chips (optional)

Preparation

Step 1

Preheat oven to 350F.
Line a loaf pan with parchment paper or spray with pam.

Combine dry ingredients in a large bowl.
Cut the cranberries in half.
Take half of the cut cranberries and cut up into small pieces.
Cut chocolate chips in half (optional, you could just add more!)

Place wet ingredients (eggs, milk, sugar, banana, vanilla, and almond) in a bowl and beat until well combined.
Gently fold wet ingredients into the dry.
Mix in the cranberries and chocolate chip pieces.

Place better into prepared pan and bake in preheated oven for 45-55 minutes, until the top is firm to the touch, or a toothpick comes out clean.
Allow to cool in pan for a few minutes before transferring to a cooling rack.
