Cherry Pie

Ingredients

  • 1 Deep dish 9" pie crust
  • 2 Tbp butter
  • 1/2 tsp salt
  • 1 1/2 16oz can pitted cherries in water or fresh pitted cherries
  • 1/2 tsp cinnamon
  • 1/2 cup sugar
  • 6 Tbp corn starch
  • 2 tsp lemon juice
  • 2 Tbp grated lemon rind
  • 1 tsp almond extract
  • few drops red food dye

Preparation

Step 1

Preheat oven to 450 degrees.

In a saucepan combine juice from one can of cherries, sugar, salt, and lemon juice. Heat and stir until dissolved. Add cornstarch and stir constantly until mixture becomes smooth and thick. Remove from heat and add the butter, food coloring, cinnamon and extract. Stir until butter is melted. Add the cherries and stir into mixture until well coated.

Bake @ 425o for 10 minutes. Lower to 375o and bake for 30 minutes until golden brown. Cool thoroughly on wire rack.
