German-Style Pork Chops

Ingredients
- 2 medium potatoes, peeled and cut into 1-inch cubes
- 2 medium carrots, cut into 1/2-inch pieces
- 1 medium onion, thinly sliced
- 4 pork loin chops, cut 3/4 inch thick
- 1/2 cup apple cider or apple juice
- 1/4 cup catsup
- 1/2 teaspoon caraway seeds
- 1 16-ounce can sauerkraut, drained
- 2 small cooking apples, peeled, cored, and cut into 1/4-inch slices
- Snipped fresh parsley (optional)
Preparation
Step 1
In a 3 1/2- to 5-quart slow cooker place potatoes, carrots, and onion; top with pork chops. In a small bowl combine apple cider or apple juice, catsup, and caraway seeds; pour over pork chops.
Cover; cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours. If using low-heat setting, turn to high-heat setting. Add sauerkraut and apple slices; cover and cook 30 minutes more. Transfer to a serving dish. Garnish with snipped fresh parsley, if desired
