Ingredients
- 4 large sweet potatoes
- 1/2 cup cinnamon sugar
- 1/4 cup butter
- 1/4 cup oil (canola)
Preparation
Step 1
Preheat oven to 400 degrees.
Wash and dry potatoes.
Rub each with canola oil and wrap in heavy duty aluminum foil, and place directly on oven rack.
Back for 45 minutes (up to an hour) or until tender.
Let cool slightly; unwrap potatoes, and cut a lengthwise slit in center of each potato.
Top each with 2 tablespoons cinnamon sugar and 1 tablespoon butter.
Serve immediatley.
