Ingredients

  • Greek Dressing:
  • 8 oz Cream Cheese Softened
  • 1/2 C. Miracle Whip
  • 1 tsp. garlic powder
  • 1 c chopped and seeded roma tomatoes --- roma’s are best, they do not add as much juice
  • 1 c chopped and seeded cucumbers
  • 1/4 c chopped black olives
  • 1/4 c chopped red onion
  • 1/2 of a chopped red pepper
  • 1 c Athenos Crumbled Feta Cheese with Garlic and Herb or Mediterrean Style
  • 2 Tbsp Red Wine Vinegar
  • 2 tsp water
  • 2 clove garlic minced
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • Dash of pepper
  • Mix all together

Preparation

Step 1

Prepare vegetables and marinate in Greek Dressing several hours or overnight. Note: You can prepare this using just the veggies without marinating, but the marinating adds a lot of flavor.

Mix Cream Cheese, Miracle Whip and garlic powder until well blended. Spread in 8 x 8 pan
Top with veggie mixture (Drain off any excess liquid before adding)
Top with Feta Cheese

Serve with Naked Baked Pita Chips or other type of crackers.

PESTO VERSION:

Substitute: ¼ c. Pesto, ¼ c. chopped marinated artichokes, 1 c. chopped roasted red peppers for veggie mixture. DO NOT marinate in greek dressing.

Substitute 1 C. Shredded Italian Style Five Cheese Blend for Feta Cheese.

Omit Garlic Powder from Base Mixture.
