Pina Colada Pudding Cups

Very simple and refreshing. You can make this ahead of time and have it ready for dessert after a hectic day.

Ingredients
- 3 cups fat free milk
- 2 envelopes whipped topping mix
- 2 pkgs instant vanilla pudding mix
- 2 can (8 oz each) crushed pineapple, undrained
- 1/2 tsp coconut extract
- 1/4 cup coconut, toasted
- 8 maraschino cherries
Preparation
Step 1
In a large bowl whisk the milk, whipped topping and pudding mixes for 2 minutes. Stir in the pineapple and extract.
Spoon into eight dessert dishes, (about 3/4 cup in each). Cover and refrigerate for 30 minutes or until chilled. Sprinkle each serving with 1 1/2 tsp toasted coconut and top with a cherry.
