Chicken Cantonese

Ingredients

  • 2 lbs. chicken
  • 1 tsp. garlic salt
  • 1 tsp. paprika
  • 1/4 tsp. pepper
  • 2 tbsp. vegetable oil
  • 1 large onion, sliced
  • 1 1/2 large green peppers, cut in thin strips
  • 1 cup slice celery
  • 1 1/4 cups chicken broth
  • 2 tbsp. cornstarch
  • 3 tbsp. soy sauce
  • 2 large fresh tomatoes, cut in eights
  • 3 cups hot cooked rice

Preparation

Step 1

Cut meat in thin strips. Sprinkle with seasonings. Saute chicken in oil 1-2 minutes. Add onion, green peppers, celery, and 1/2 cup broth. Cover; steam 2 minutes. Blend remaining broth with cornstarch and soy sauce. Stir into chicken mixture. Add tomatoes; cook and stir 2 minutes or until sauce is slightly thickened. Serve over beds of fluffy rice. Makes 6 servings.
