Stove Top Sausage and Potatoes

Ingredients

  • 14-16 oz. precooked smoked sausage or kielbasa - turkey works well
  • 1 green pepper
  • 1 large onion
  • 1 pound frozen cubed hash browns

Preparation

Step 1

Start hash browns in a large skillet (I used cast iron) with 2 tablespoons oil over medium high heat. Stir and flip occasionally. They will take about 15 minutes to get crispy brown.
Chop one green pepper and one medium onion. Cut sausage into ½ inch medallions. Cook in a second large pan in 1 tablespoon oil over medium high to high heat. Cook until onion and pepper are tender and sausage is browning. About 10-12 minutes.
Combine with the hash brown potatoes and serve.
