Edamame Salad

Ingredients

  • 10 ounces frozen shelled edamame (green soybeans)
  • 1/4 cup seasoned rice vinegar
  • 1 1/2 teaspoons extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup fresh parsley, chopped

Preparation

Step 1

Toss the edamame, vinegar, oil, salt, pepper and parsley together in a large bowl.

Serve chilled or at room temperature.
