BROCCOLI SHEESE SOUP

Ingredients

  • 4-5 cubed potatoes
  • 1-2 c chopped celery
  • 2 t salt
  • 1 10 oz pkg broccoli
  • 6 chicken flavor bouillon cubes
  • 1 lb velveeta cheese in chunks
  • 2 c milk thickened with 1/4 c flour
  • 2 c carrots cut
  • 1 c onion chopped
  • 2 1/2 c water
  • 1/2 c butter
  • 1 T dry mustard
  • 1/2 t pepper

Preparation

Step 1

Steam potatoes, carrots, celery, and onion in salted 2 1/2 c water. Simmer 20 min. Add broccoli and cook 7 min more. Melt butter with flour. Stir in milk, then bouillon and seasonings. As sauce thickens, blend in cheese, then vegis. To extend add a can of cream of chicken soup undiluted
