Ingredients

  • 2 lb Yukon Gold Potato (sliced 1/8 inch thick)
  • 2 Med Onions, sliced thin
  • 3 Garlic Cloves
  • 1 tsp Thyme
  • 1/3 C Extra Virgin Olive Oil, plus 2 tsp
  • 3/4 C Chicken Broth
  • 1/4 C Panko Breadcrumbs
  • 1/4 C Parmesan Cheese
  • Salt and Pepper

Step 1

Place onion in a dry skillet over medium heat for 10 minutes, stirring so they do not brown. Add 2 tsp olive oil, stir to coat onions. Continue to caramelize the onions (another 20-30 minutes) until they are dark brown, but not burnt.

Heat oven to 400 degrees.

In a bowl, toss the potatoes with remaining olive oil, garlic, thyme and salt and pepper to taste.

Line the bottom of a casserole dish with sliced potatoes followed by a layer on onion. Add a second layer of potato/onion. Continue with a layer of potato on top.

Pour chicken broth in pan.

Place dish in oven for 1 hour.

Remove dish, top with a mixture of Panko breadcrumbs and Parmesan cheese.

Return to oven for 10 minutes. Remove and let sit for 5 minutes before serving.
