Ingredients
- 5 pounds small red new potatoes
- 1 large red onion -- diced
- 2 cups red grapes -- cut in half
- 1/4 cup chopped parsley
- 3 stalks celery -- thinly sliced
- 1/2 cup mayonnaise
- 3 Tablespoons za'atar
- 1/4 cup sliced toasted almonds
Preparation
Step 1
In a large pot of boiling water, cook the potatoes 20 to 30 minutes until they are tender. Drain and cool thoroughly.
Combine the potatoes with the onion, grapes, parsley, celery, mayonnaise, Za'atar and almonds. Toss thoroughly. The potato salad is even better after it sits overnight.
