Noisette Potatoes

Ingredients

  • 1 1⁄2 lb. new potatoes, peeled
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. unsalted butter
  • Salt and black pepper to taste

Preparation

Step 1

Preheat oven to 350°.

Sauté potatoes in oil in an ovenproof skillet over medium-high heat on one side until golden brown, about 10 minutes. Without stirring, place skillet in oven and roast potatoes until fork-tender, 30–40 minutes. Carefully return skillet to stove top.

Add butter to skillet and stir potatoes to coat as butter melts. Season potatoes with salt and pepper.
