Sweet Potato Bake

Ingredients

  • 2 large sweet potatoes or yams
  • 2 medium size bananas
  • 3/4 cup brown sugar
  • 1/2 cup flour
  • 1 stick cold butter
  • 1/2 cup chopped pecans
  • 2/3 stick butter
  • 2 tablespoons honey

Preparation

Step 1

Step 1:
Pierce the sweet potatoes and roast them with the bananas (skins on) at 375 degrees F. Roast the bananas for 15 minutes and the sweet potatoes for 40 minutes. Remove and reduce oven to 350 degrees.

Step 2:
Prepare crumble topping by rolling together the brown sugar, flour, and 1 stick of butter. Add chopped pecans.

Step 3:
Whip or mash bananas and sweet potatoes together. Add 2/3 stick of butter and honey. Place in 8" x 11 1/2" baking dish and top with crumb topping. Bake for about 20-25 minutes.
