Gooey Apple Sheet Cake

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 1 cup butter, melted
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • 2 cups chopped apples
  • 1 1/2 teaspoons cinnamon
  • 3 cups powdered sugar
  • 8 ounces neufchatel cheese
  • 2 eggs
  • 1/4 cup oats

Preparation

Step 1

1. Beat butter and sugar together, beat in eggs.

2. Combine flour-cinnamon. Add to butter, alternately with buttermilk. Fold in apples. Spread into sprayed 13x9" pan.

3. Combine sugar-oats, sprinkle over cake.

4. Bake at 350º 40-45 mins. Store at room temperature or in the refrigerator.

Notes: My notes: Just fabulous ... Reduced fat/calories a bit using others' suggestions - only 3/4 cup sugar in the cake part, upped the amount of apples, replaced half of the butter with vanilla fat-free yogurt, and cut down the sugar in the topping to 2 cups. Fabulous.

Lindainmo's notes: I made this again this week and lightened it and it still turned out wonderful!! Also, note that I cut the recipe in half. I just wanted to let others know that buttermilk also works as a replacement for half the butter. And I really believe that this cake tastes better on the second day. Such a delicious recipe! Here's what I did...

For the Cake:
1 cup all-purpose flour
3/4 cups granulated sugar
1/4 cup unsalted butter -- melted
1 eggs
1/2 t. baking soda
1/8 t. salt
1/2 cup low-fat buttermilk
1 1/2 cups peeled and chopped tart apples -- (1/4-1/2 inch pieces)
3/4 t. ground cinnamon
fresh ground nutmeg, to taste (1/8 to 1/4 t.)
For the Topping:
1 cup powdered sugar
4 oz. lowfat cream cheese, softened
1 egg white
1 t. pure vanilla extract
2 T. quick oats

Mix melted butter and sugar with a mixer. Add egg and beat well.

Combine the flour, baking soda, salt, cinnamon, and nutmeg in a small bowl. Add flour mixture alternately with buttermilk, mixing well.

Fold in the chopped apples. Spread batter into 8-inch baking pan sprayed with Pam.

Mix Topping ingredients and put over cake BEFORE baking. Bake in a 350?F oven for 30-35 minutes. You can store this on the counter OR in the refrigerator.

made this yesterday using Linda's version and it is DELICIOUS! I can't even imagine how it will taste today since Linda said it's even better on the second day. How is everyone eating this cake -- warm, room temp, or cold? DH had a piece warm and loved it, then had a piece at room temp and said it was better warm. But then he had a third piece last night at room temp and said it was just as good as it had been warm. We haven't tried it cold yet, but it's in the fridge now. I ate mine at room temp and thought it was great, but again I have nothing to compare it to.
