Blackberry & Thyme Clafoutis

Why We Love It: Simple ingredients yield something spectacular, and it takes little effort to make.
Ingredients
- 1/2 c all-purpose flour
- 1/4 t salt
- 2 lg eggs
- 4 T white granulated sugar
- 1 c whole milk
- 1/2 t vanilla
- 1 T unsalted butter
- 12 oz fresh blackberries, washed & patted dry
- 1 T fresh thyme leaves
- Confectioners' sugar

Preparation
Step 1
1. Preheat oven to 425.
2. In a food processor, combine flour, salt, eggs, 2T sugar, milk & vanilla.
3. Mix for about 1 minute until batter is smooth. Set aside.
4. In a 9" heavy cast iron skillet, melt butter over med heat, coating bottom & sides of pan.
5. Add blackberries & thyme, & cook for 2-3 min, until blackberries soften slightly & are coated w/butter.
6. Sprinkle blackberries w/remaining sugar & cook for 1-2 min, until sugar dissolves & turns syrupy.
7. Pour batter into skillet over blackberries & bake for ~20 min, or until clafoutis turns golden brown.
8. IMPORTANT: Keep oven door closed the entire time, or clafoutis may collapse!
9. Slice & serve immediately w/ a light dusting of confectioners' sugar.
10. Try w/ yogurt, whipped cream, or the chef's favorite, ice cream.
