- 2 cucumbers peeled, and sliced 1/2" thick
- 1/4 cup flour
- 3 tablespoons butter
- Salt to taste
- Freshly-ground black pepper to taste
Pat cucumber slices dry with paper towel. Dredge them in flour.
Heat 1 1/2 tablespoons butter in skillet over medium heat and fry 1/2 cucumber slices until brown, 2 minutes per side. Remove from pan and drain on paper towels.
Add rest of butter to pan and fry remaining slices, then drain.
This recipe yields 4 to 6 servings.
